NIGHT 1: instant pot meatballs
I am so grateful for my instant pot.
Just throw the browned meatballs into the instant pot (or brown them in the pot) with your favorite jar of sauce. Done. We like Rao's (who doesn't?)!
NIGHT 2: lemon thyme chicken
my kids affectionately call this Magnolia Chicken. I modified this recipe from
Joanna's Mrs. Gail's Chicken.
We are dairy free at the Birch house - here are the substitutions I make:
1. the zest of 1 lemon and 1 Tbs of chopped thyme for the Parmesan in the panko
2. brown the chicken in olive oil only
Try it either way!
I serve the chicken with salted angel hair pasta and salad.
NIGHT 3: blistered shishito peppers with salmon & rice
The dipping sauce is worth making! The peppers are SO simple to make and are almost too pretty to eat.
sSalmon cooks perfectly every time in the oven at 350 degrees for 30 minutes.
An easy weeknight meal.
NIGHT 4: 30 minute rotisserie chicken soup
Who doesn't appreciate a quick hack in the kitchen? This recipe calls for a pre-cooked rotisserie chicken. so simple and yummy, you will have everyone thinking you slaved over the stove all day.
Bonus: leftovers can be stored in the fridge for up to 5 days and reheated for school lunches.
NIGHT 5: take out! Sit back and relax.
